Prepare ingredients and have ready to add.
Heat a large frying pan (nonstickis best). Put tortilla into pan and flatten a bit.
Add the mozzarella,then vegetables and meat. Top with a little more grated cheese if desired.
Gently lift up one half of the tortilla and fold it over to the opposite side.
Cook on one side, being careful not to burn the bottom. Once bottom is browned and has started to crisp, flip over the whole half (trying to match the edges a bit) and brown the other side. Serve with salsa.
